Greengage
This fruits has been grown all over Europe and America for centuries. It is a widely spread type of plums that are very appreciated amongst consumers because they are very sweet and the fruits present small seeds that can be easily taken apart from the fruit, compared to other plum types.
The greengage is a tree that is easy to grow. Orchards full of greengage trees can be found all around the world and domestic cultivators love this species. These fruits are a man-made breed, developed by Frenchmen after trying to domesticate a wild type of plums that could be found in their forests. The wild green plums were not considered edible, and there is no known research that can demonstrate they were. French cultivators crossed this species with a regular plum tree and managed to get the fruit known today as greengage.
Greengage fruits are found in hypermarkets and usually called simply plums or green plums. They look different from usual plums because they are not purple but green or yellow. Some people think that the greengage fruits are mature when they turn yellow, and that the green fruits are not matured yet, but this is a misconception. Greengage fruits differ from region to region. The tree species has been adapted and modified for specific climates. So, even if the original greengage fruits were green when fully grown and ready to consume, nowadays we can find greengage fruits that have a lighter yellow peel. Nevertheless, they both taste almost the same and the inside fruit texture remains unchanged.
Sometimes greengage fruits are used when they are still young. If someone wants to make greengage jam, they will need immature fruits to avoid the composition from getting rotten before time. Immature fruits present preservation abilities even when they are cooked. The best time to pick them from the tree if we want to make jam is when the peel of the seed hasn’t formed yet. This way we can leave the seed it and simply make a hole in the greengage and leave it in water for 10 minutes so the bitter taste will disappear. Then, they are ready to be boiled and placed in recipients, waiting jam maturing.
Greengage is also used in alternative medicine. The fruit contains a high count of natural sugar, so diabetics can consume it freely. It also contains vitamin B and A, helping the immune system fight disease and fighting aging effects.
