Frozen Blueberries
The blueberry season is pretty short, and firmness is the first quality clue. The deep blue-red color of the blueberry juice suggests that the fruit has a high content of antioxidants. Fresh blueberries, as opposed to frozen blueberries, have a higher antioxidants rate, while the lowest antioxidants concentration is found in blueberry juice. For a greater antioxidants quantity, the ripest fruits must be chosen. Researches conducted by The Innsbruck University in Austria show that late harvested blueberries have a higher content of active ingredients.
You can make frozen blueberries yourself using fresh ones and then consume them many months after the blueberry season has ended. For freezing one must choose only fresh blueberries that will be placed onto an oven plate and kept into the fridge. In a few hours, the blueberries will be completely frozen and ready to make the transfer to the freezer. You can not put then directly into the freezer because they will freeze too quickly and the active ingredients will get lost in the process.
Don’t forget to place a marker onto the freezing bag that shows the exact date when the frozen blueberries were transferred into the freezer, because they will only last for a few months there. When you want to un-freeze a package, make sure they are not spoiled by visually checking their aspect. When they are taken out of the freezer, they are not rotten if they do not lack color, they are not shiny and sticky and they did not develop a hard peel on the outside.
Frozen blueberries can be used for home recipes such as pies and pancakes, for blueberry jam or cookies, but they can also be consumed as given, after de-freezing them slowly. First take them out of the freezer and put then into the refrigerator for a few hours. Then you can place them on a plate and let them in a dry and dark spot to completely un- freeze.
Frozen blueberries also constitute a great ice-cream toping or a nice cooling sweet snack on a hot summer day. There is no need to add sugar; they will retain all the natural flavor and fructose sweetener even if they have been frozen. They do lack in antioxidants quantities compared to fresh ones, but they still register greater values than most fresh fruits. Eating them as they are or after preparing a tasty pie will reduce the risk of cancer and the probability of developing liver diseases. This will help in preserving a healthy organism.
